On our farm, we have a cellar for the wine elaboration and aging.
It is mall, pretty, crafts, with modern technology, designed to develop, store and taste wines in the best conditions.
Our vineyards have reached the optimum age and growth, we look after and pamper them the whole year. We try not to use pesticide treatments and only leave a minimal amount of bunches, in order to concentrate the highest quality at harvest.
Our strains are noble varieties, Merlot, Cabernet Sauvignon and Syrah. We know that the terrain responds as “Terroir” suitable and will give us great satisfactions.
In September, the grapes are collected by hand, selecting them one by one, placing them in small boxes, with great care, with less aggressive mechanical treatments.
The fermentation takes place at a controlled temperature and the aging, in new barrels of French oak, fine grain, by varieties, not pressed or filtered.
In 2011 was the first time we have harvested to produce our own wine. We look forward to taste the first Red in 2013.
While, we have developed a small quantity of Rosé, at low temperature that meets the full range of flavors and aromas of our crop.
When you come, we will be happy to show you the vineyards and the winery, where you can taste our Rosé and other mallorcan wines and, if desired, you can celebrate an event with friends.
The family owning the “Celler Canyelles I Batle” comes from a long tradition in the world of wine and in the preparation of liquors in Mallorca.
Now the challenge is to create an exclusive wine, only available to a few, as our Hotel. We await you.
